Ian, here's one that's brilliant on the grill!

Here we go with American measurements, but there's not much to consider honestly, it's just ratios anyway. If there's any questions about it, please ask! If I could make a video of this recipe of me making it, everything would be clear as bouillon.

Stuffed & Grilled Jalapenos

Ingredients:

8oz cream cheese, room temp
4oz sour cream
4oz pepper jack cheese,shredded
Salt & Pepper
Dried Chipotle seasoning
(could use cayenne pepper but go really easy on it, it's quite strong)
Jalapenos, halved, deseeded/deveined

Mix all except the peppers until combined. Taste a bit and add more of whatever you'd like.

If in the oven, preheat to 375 degrees F.

Stuff the peppers with the mixture, then sprinkle all with a little more cheese. Place on, ideally, a grill plate and bake for 20-30 minutes, until nicely browned as seen in my pic below.

For the drizzle (not shown in the pic), some sour cream, salt, chipotle or cayenne pepper seasoning mixed together vigorously with a teaspoon or two of lime juice. Drizzle across the hot peppers soon as they come out of the oven or grill. Enjoy! I can eat an entire plateful of these, they're marvelous I promise.
